With Chef Enrico, you will prepare four signature creations that highlight different textures, baking styles, and flavor profiles:
• Pepperoni Hot Honey
• Chicken Truffle Cream Pizza
• Classic Margherita
• Tiramisu Calzone
Throughout the session, Chef Enrico will walk you through the fundamentals that define regional pizza styles and professional results, including:
• Hydration levels and their impact on structure, chew, and flavor
• Fermentation and proofing techniques for optimal rise and elasticity
• Baking methods using deck ovens, convection ovens, and pizza stones
• Knuckle shaping and slap shaping for refined dough-handling skills
Working closely with Chef Enrico and three dough types: thin crust, deep dish, and calzone, you will learn how science, technique, and timing come together to create consistent, high-quality pizza across multiple styles.
